this entry is for my lovely, beautiful friend carol who i got to cook and catch up with!! we kept it simple but tasty with a charcuterie plate 🙂 we added our own touch to it with a favorite…. BEETS! i think i am slightly obsessed with them but i had even more fun this time because they were a tiedye-ish mix of colors!! i made a trip to the farmer’s market in the morning to get fresh vegetables and scored on the beets as well as a bunch of asparagus.
i cooked them in the same oven at 350 degrees. for the beets i washed them down, cut off the leaves, and drizzled olive oil on them and wrapped them all together in foil. baked for about 45 minutes, but it depends on the size of your beets, the bigger they are the longer they take. the asparagus took about ten minutes. i drizzled them with olive oil, sea salt, and pepper and tastiness was the result! with a little crisp!

we also picked up some cured meats, salami, prosciutto, basically a few of the meats we sampled and liked 🙂 AND freshly baked bread! was still warm when we bought it. stole a couple bites in the car ride home 😉
make sure to pick up a good wine as well 😉 not featured but we picked up a red wine, mainly because i wanted to try out my wine aerator. success!! everyone should have one!!! cheers to more nights with great friends!
